ROSSO IGT “QUADRATOROSSO” WINE FROM TOSCANA
(Rosso IGT “Quadratorosso” from Casale Marittimo, Pisa)
Quadratorosso is inspired by Oliviero’s favourite painting – Red Square by Kasimir Malevich (1915), known for showing a strong political statement through the art. The painting – what we see as an asymmetrical square is the shape of Monteromboli, the estate’s main vineyard, and represents all things rebellious that one can find in the glass of Quadratorosso.

TASTING NOTES – What’s in the glass?
Quadratorosso retains a dark ruby colour, rich in purple reflections, deep and impenetrable. First of all, it expresses a wide range of floral notes, such as dry violet and red peony. The fruity aromas come to the nose at a later time, together with a dash of oriental spices, presenting a remarkable bouquet of ripe red pulp fruits, such as blueberry and blackberry jam. On the palate is fruity as well as spiced, powerful and concentrated. Round and smooth tannins make this wine extremely drinkable, with a silky mouthfeel. Quadratorosso has a great personality and excellent length.

PARING – What do I pair with?
Quadratorosso accompains very well red meat and venison dishes, and above all blue cheeses as Gorgonzola and Stilton.

WINEMAKING NOTES – How is it made?
The harvest begins in the second half of September and farmers pick grapes by hand and put them in wooden bins. Once in the cellar, the selection of the grapes takes place in two periods, first immediately after picking and then after destemming operations, as a result to guarantee that only completely ripe berries go to the fermentation tanks. The maceration lasts approximately 20 days while the fermentation takes place at the same time in stainless steel tanks. Then, the wine goes directly into other tanks, where, in conclusion, it matures for 6 months. Consequently, Quadratorosso remains 12 months more in the bottle before the release.
