TASTING NOTES – What’s in the glass?
Vermentino retains a bright yellow colour, with greenish reflections. It reveals lively citric notes, such as lemon peel and pink grapefruit, and above all, an elegant dash of cedar wood. Hints of honeysuckle and hawthorn represent herbs and give this Vermentino great olfactory intensity. In the mouth, it has a charming bitter touch, which refers to saffron and wild fennel. On the palate, it is acidic, light and saline.

PARING – What do I pair with?
Vermentino is ideal to enjoy as an aperitif, especially if accompanied by raw fish. Shrimps, oysters and salmon or tuna carpaccios will be exalted by the aroma of this gourmet wine that thanks to its acidity will always leave your mouth clean.

WINEMAKING NOTES – How is it made?
The harvest begins in the second half of September and farmers pick grapes by hand and put them in wooden bins. Once in the cellar, the selection of the grapes takes place in two periods, first immediately after picking and then after destemming operations, as a result to guarantee that only completely ripe berries go to the fermentation tanks. The maceration lasts approximately 10 days while the fermentation takes place at the same time in stainless steel tanks. Then, the wine goes directly into stainless steel tanks, where, in conclusion, it matures for 6 months. Consequently, Vermentino remains 2 months more in the bottle before the release.
