BIANCO IGT PERLENUVOLE WINE FROM TOSCANA
Terre Apuane, Carrara (MS)
Vermentino is usually a medium-light bodied white, with high alcohol content. What’s exciting about this 100% Vermentino is it can be deliciously complex to taste, similar to Sauvignon Blanc.
TASTING NOTES – What’s in the glass?
Perle Nuove retains pale yellow colour, with greenish reflections. It expresses lively fruity notes such as pear and white peach. There are also spicy and herbaceous hints, but the absolute protagonist is the minerality, with subtle notes of crushed rocks and citrus zest. On the palate, Perle Nuvole is dry and crisp, with a saline finish. Its flavour is particularly salty thanks to the effects of the sea-breeze on the vineyards of Terre Apuane. On the finish, it can be a bit snappy with bitterness similar to the taste of grapefruit pith. Extremely drinkable and with good persistence.
FLAVOUR STYLE: Dry White
PARING – What do I pair with?
Due to its bolder intensity, you can easily match Perle Nuvole with richer fish such as halibut or even meats as bold as fennel-spiced pork sausages.

WINEMAKING NOTES – How is it made?
The harvest begins in the second half of September and farmers pick grapes by hand and put them in wooden bins. Once in the cellar, the selection of the grapes takes place in two periods, first immediately after picking and then after destemming operations, as a result to guarantee that only completely ripe berries go to the fermentation tanks. The maceration lasts approximately 10 days while the fermentation takes place at the same time in cement tanks. Then, the wine goes directly into tanks, where, in conclusion, it matures for 6 months. Consequently, Perle Nuvole remains 6 months more in the bottle before the release.
